Homemade Simmered Tomatoes

10 ripe tomatoes

2 teaspoons salt
Instructions

Bring a large pot of water to a boil and prepare a separate bowl with ice water to set aside.

Make a shallow X cut at the bottom of each tomato to ease peeling. Place them in the boiling water for 30 seconds to 1 minute, until the skin starts to loosen.

Transfer the tomatoes to the ice water bath and let them sit for 5 minutes. Peel off the skins with your hands and cut the tomatoes into quarters.

Place the tomatoes into a large saucepan over low heat, add salt, and simmer, stirring occasionally to prevent burning, for about 20 to 30 minutes until the sauce thickens slightly.
