Homemade Spinach Noodles

1 ¼ cups torn spinach leaves

2 tablespoons water

1 egg

½ teaspoon salt

1 ¼ cups all-purpose flour
Instructions

In a saucepan, combine the spinach and water. Cover and cook until the spinach is fully wilted and tender. Allow it to cool slightly.

Transfer the spinach and cooking liquid to a blender. Add the egg and salt, then blend until smooth. Pour the mixture into a bowl and gradually stir in enough flour to form a firm dough.

Turn the dough out onto a floured surface and knead for 1 minute. Roll the dough out thinly and let it rest for 20 minutes. Once rested, roll the dough up loosely, slice it into 1/4-inch wide strips, and unroll. Cut the noodles into your preferred lengths, then lay them out on a rack to dry for 2 hours.
