Hong Kong-Style Sweet and Sour Pork
Ingredients List
-
2 teaspoons light soy sauce
-
⅛ teaspoon white sugar
-
2 teaspoons potato starch
-
1 teaspoon sesame oil
-
ground black pepper to taste
-
1 pound pork loin, cut into 1-inch cubes
-
1 cup water
-
2 tablespoons white vinegar
-
¼ cup ketchup
-
¼ cup white sugar
-
1 pinch salt
-
2 teaspoons potato starch
-
1 dash red food coloring
-
1 egg, beaten
-
1 cup potato starch
-
2 cups peanut oil for frying
-
1 green bell pepper, cut into large chunks
-
2 cayenne peppers, sliced
-
4 slices canned pineapple, chopped
-
2 cloves garlic, sliced
-
2 green onions, sliced
Instructions
-
In a large bowl, whisk together soy sauce, sugar, 2 teaspoons of potato starch, sesame oil, and black pepper. Add the pork and mix to coat evenly. Let it marinate for 15 minutes.
-
For the sauce, whisk together water, vinegar, ketchup, 1/4 cup of sugar, salt, 2 teaspoons of potato starch, and red food coloring in a separate bowl. Set it aside.
-
Dip each pork piece in the beaten egg, then dredge it in 1 cup of potato starch, pressing gently to coat thoroughly.
-
Heat peanut oil in a wok over medium-high heat until it reaches 375°F (190°C).
-
Fry the pork pieces in the hot oil for 4 to 5 minutes until crisp and golden brown. Remove and drain the pork, leaving the oil hot. Return the pork to the oil for an additional 30 seconds, then remove and drain again. Discard all but 1 tablespoon of the oil from the wok.
-
In the same wok, heat 1 tablespoon of the reserved oil over medium heat. Sauté green bell pepper, cayenne pepper, pineapple, garlic, and green onions for about 5 minutes. Pour in the sauce and stir until it thickens. Add the pork and toss to coat evenly. Remove from heat and serve.
