2 cups lukewarm water

1 ½ cups garbanzo flour

5 tablespoons olive oil, divided

1 ½ teaspoons kosher salt

½ teaspoon minced fresh rosemary (Optional)

freshly ground black pepper to taste
Instructions
In a large mixing bowl, whisk lukewarm water and chickpea flour until smooth. Cover the bowl with plastic wrap or a plate and let it rest at room temperature for 2 hours. Skim off any foam that forms on top of the batter. Then, stir in 3 tablespoons of olive oil, kosher salt, and rosemary until well combined.
Preheat the oven to 500°F (260°C).
Place a 10-inch cast iron skillet over high heat until it’s smoking hot. Add the remaining 2 tablespoons of olive oil, swirling the pan to coat the bottom. Keep heating until the oil shimmers and a faint wisp of smoke rises from it.
Quickly pour the batter into the hot oil, then carefully transfer the skillet to the preheated oven.
Bake in the preheated oven for 25 to 30 minutes, until the pancake is golden and crisp. Immediately transfer the pancake to a plate, slice it into wedges, and garnish with freshly ground black pepper. Serve hot.
