Hummus-Infused Chicken

2 tablespoons olive oil

2 skinless, boneless chicken breast halves

½ cup prepared hummus

½ lemon, juiced

1 teaspoon paprika
Instructions
Preheat your oven to 450°F (230°C).
Combine chopped green bell pepper and onion at the bottom of a 9-inch casserole dish. Drizzle olive oil over the vegetables and toss to coat evenly.
Spread a thin layer of hummus over the chicken breasts, then place them on top of the vegetables. Squeeze fresh lemon juice over the chicken and sprinkle with paprika.
Bake the chicken breasts in the preheated oven until the center is no longer pink and the juices run clear, about 35 minutes. Use an instant-read thermometer to check for a minimum internal temperature of 165°F (74°C).
