According to a professional chef, it's possible—and all it takes is one simple trick.

I recently had the pleasure of meeting Nelson Serrano-Bahri, chef and Director of Innovation at the American Egg Board, at an egg-focused dinner. While there were plenty of creative dishes that night, one casual remark he made during a demo on his deviled eggs with elote salad garnish completely changed my perspective. After hearing his tip, I couldn’t believe I hadn’t thought of it myself. I had to ask him to explain further, and here's what he shared:
“When making deviled eggs, many people don’t realize that the egg whites should be seasoned with a touch of salt! This step balances the flavors and prevents the yolk mixture from becoming overly salty. I suggest using a coarse finishing salt like Maldon, but kosher salt works too. For an extra twist, try flavored or seasoned salts to add a surprise element and create layers of flavor that elevate both the egg whites and the deviled eggs themselves.”
“When making deviled eggs, many people don’t know that you should salt the egg whites too,” says Nelson Serrano-Bahri.
Serrano-Bahri also offered some valuable tips for the yolk filling. “When preparing the filling for your deviled eggs, be sure to salt your yolks as well. Try experimenting with different seasoned or flavored salts to elevate the flavor of your deviled egg filling.”
Imagine chipotle-lime salt paired with jalapeño heat, or smoky salt with a bacon filling. You could use Lawry’s for a crab-stuffed version, or simply go all out and add ‘everything’ for a flavorful twist.

He didn’t stop there, “You can get creative with the garnishes and toppings to add your own personal twist and enhance the flavor of your deviled eggs.
