Instant Pot Beef Taco Bowls

2 pounds beef stew meat

½ onion, sliced

⅓ cup taco seasoning mix (such as Savory Spice)

2 3/4 cups water, divided

1 (10 ounce) bag yellow rice (such as Vigo)

1 (15.25 ounce) can black beans, drained, or to taste

1 (15.25 ounce) can corn kernels, drained, or to taste

1 (8 ounce) package shredded Cheddar cheese, or to taste
Instructions

Begin by setting your Instant Pot or any multi-functional pressure cooker to the Sauté mode. Add oil and brown the beef, cooking for about 3 minutes on each side. Once browned, add chopped onion, taco seasoning, 1/4 cup of water, and garlic salt. Stir to combine all ingredients.

Secure the lid and set the Instant Pot to high pressure. Follow the manufacturer’s instructions and cook for 30 minutes, allowing 10 to 15 minutes for the pressure to build.

In the meantime, bring the remaining 2 1/2 cups of water to a boil in a large pot. Add rice and cook for 1 minute. Cover tightly with a lid, lower the heat, and let it simmer for 20 to 25 minutes, until the rice is tender. Remove from heat and let it cool.

After the pressure cooking cycle is complete, allow the pressure to release naturally, which may take 10 to 40 minutes. Once the pot has cooled, carefully open the lid.

Divide the cooked rice and beef into 6 portions, placing them into containers. Top each portion with black beans, corn, and shredded Cheddar cheese. Seal the containers and refrigerate.
