Israeli Couscous Mac and Cheese

2 teaspoons unsalted butter

1 cup pearl (Israeli) couscous

2 cups chicken broth

½ cup heavy cream

¼ cup diced pimentos

1 pinch cayenne pepper, or more to taste

3 ounces shredded sharp Cheddar cheese

1 tablespoon chopped fresh chives

salt and freshly ground black pepper to taste
Instructions
Heat butter in a large skillet over medium heat. Add couscous and cook, stirring occasionally, until lightly toasted, about 2 to 3 minutes.
Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low and simmer for 6 to 7 minutes, until most of the broth is absorbed and the couscous is plump.
Stir in the heavy cream and pimentos, then sprinkle in the cayenne pepper. Continue cooking for another 2 to 3 minutes, or until the couscous is tender, adding more broth if necessary.
Remove from heat and stir in the Cheddar cheese until fully melted. Mix in chives, and season with salt, black pepper, and additional cayenne pepper to taste.
