Jamaican-Style Cabbage

1 head cabbage

2 tablespoons olive oil, or as needed

1 small onion, thinly sliced

½ chopped green bell pepper

1 green onion, sliced

1 whole Scotch bonnet chile pepper

2 sprigs fresh thyme

1 teaspoon salt (Optional)

1 cup shredded carrots

¼ cup white vinegar

2 tablespoons white sugar
Instructions

Remove the tough outer leaves from the cabbage. Core the head, then shred the cabbage and set aside.

Heat olive oil in a large pan over medium-high heat. Add the onion, bell pepper, and green onions. Sauté for about 5 minutes until softened. Stir in the Scotch bonnet pepper, thyme, and salt.

Add the cabbage and carrots to the skillet and mix well. Cover and reduce heat to medium-low. Cook, stirring occasionally, for about 10 minutes until the cabbage begins to soften.

Stir in vinegar and sugar. Continue cooking uncovered for about 3 more minutes until the cabbage is tender. Remove the Scotch bonnet pepper and thyme before serving.
