Juicy and Flavorful Roast Chicken

3 sprigs fresh thyme, chopped

2 sprigs fresh rosemary, chopped

2 cloves garlic, minced

1 lemon, zested then halved

1 teaspoon olive oil

1 pinch sea salt and ground black pepper, or to taste

1 (3 pound) whole chicken

4 whole garlic cloves
Instructions

Preheat the oven to 425°F (220°C).

In a small bowl, mix together thyme, rosemary, minced garlic, and lemon zest, then stir in olive oil. Season with salt and black pepper to taste.

Loosen the chicken skin from the meat around the breast and thighs. Rub the herb mixture directly onto the meat under the skin. Stuff the chicken cavity with half a lemon and whole garlic cloves. Place the chicken in a roasting pan and squeeze the remaining lemon evenly over the top.

Roast in the preheated oven until the chicken is no longer pink at the bone and the juices run clear, about 1 hour 35 minutes. An instant-read thermometer inserted into the thickest part of the thigh should read 180°F (82°C). Remove the chicken from the oven, cover with a double layer of aluminum foil, and let it rest for 10 minutes before slicing.
