Ingredients Needed
Salad Components

1 ⅓ cups water

⅔ cup quinoa
-
1 bunch kale, torn into bite-sized pieces

½ avocado, peeled, pitted, and diced

½ cup chopped cucumber

⅓ cup chopped red bell pepper

2 tablespoons chopped red onion

1 tablespoon crumbled feta cheese
Vinaigrette Dressing

¼ cup olive oil
-
2 tablespoons lemon juice
-
1 ½ tablespoons Dijon mustard

¾ teaspoon sea salt
-
¼ teaspoon ground black pepper
Instructions
In a saucepan, bring 1 1/3 cups of water and quinoa to a boil. Once boiling, reduce the heat to medium-low, cover, and let it simmer for 15 to 20 minutes, until the quinoa is tender and the water has been absorbed. Remove from heat and set aside to cool.
Place a steamer basket in a saucepan with about 1 inch of water and bring to a boil. Add the kale, cover, and steam for about 45 seconds until heated through. Transfer the kale to a large plate, then layer with the quinoa, avocado, cucumber, bell pepper, red onion, and feta cheese.
In a bowl, whisk together olive oil, lemon juice, Dijon mustard, sea salt, and black pepper until the mixture is smooth and well-combined. Drizzle the dressing over the salad.
