Kelsey's Best Stuffed Green Peppers

1 cup uncooked white rice

3 large green bell peppers, halved and seeded

1 ½ pounds lean ground beef

1 onion, diced

garlic powder to taste

1 (15 ounce) can tomato sauce

2 cups finely shredded mozzarella cheese
Instructions
In a medium saucepan, bring water to a boil. Add the rice and stir. Lower the heat, cover, and let it simmer for 20 minutes.
Preheat your oven to 350°F (175°C).
Place the green bell peppers in a medium pot and cover with water. Bring to a boil and cook for 10 minutes. Once done, remove the peppers and place them in a 9x13 inch baking dish to set aside.
In a large skillet over medium heat, brown the ground beef and drain the excess fat. Return the beef to the heat and add the onion, cooked rice, garlic powder, salt, and pepper. Stir in the tomato sauce and mix well. Let simmer for about 10 minutes, then remove from heat.
Fill each pepper half with the meat mixture. Bake in the preheated oven for 45 minutes or until the top starts to turn golden brown.
Sprinkle shredded mozzarella cheese on top of each stuffed pepper. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is lightly browned and bubbly.
