Keto Crustless Spinach, Mushroom, and Tomato Quiche

1 cup heavy cream

1 cup shredded Gouda cheese
Instructions

Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish with cooking spray.

Melt butter in a medium cast iron skillet over medium heat. Add onion and cook, stirring, until soft and translucent, about 5 minutes. Stir in cherry tomatoes and cook until slightly softened, about 3 minutes. Add mushrooms and cook until tender, about 3 minutes. Stir in spinach and cook for 1 more minute.

In a bowl, whisk together cream, eggs, salt, pepper, and nutmeg.

Spread half of the Gouda cheese in the prepared pie dish, then top with the spinach mixture. Pour the egg mixture over and sprinkle the remaining Gouda cheese on top.

Bake in the preheated oven until the eggs are set and the top is golden, about 25 minutes.
