Lime-Infused Mahi Mahi

¾ cup extra-virgin olive oil

1 clove garlic, minced

2 (4 ounce) mahi mahi fillets

2 twists lime zest (Optional)
Instructions

In a bowl, whisk together olive oil, lime juice, minced garlic, cayenne pepper, lime zest, black pepper, and salt. Add the mahi mahi fillets and turn to coat evenly. Let them marinate for at least 15 minutes.

Preheat your grill to medium heat and lightly grease the grate.

Remove the mahi mahi fillets from the marinade, shaking off any excess. Discard the leftover marinade.

Grill the mahi mahi for 3 to 4 minutes per side, or until the fish flakes easily with a fork and develops a golden brown crust. Serve with a garnish of lime zest twists.
