Instructions
In a bowl, whisk together egg, cream or milk, salt, cayenne pepper, nutmeg, and lemon zest. Stir until the mixture becomes smooth and runny. (Add an extra 2 tablespoons of milk or cream if needed.)
Toast the bread until golden brown. Place a slice of Havarti cheese on each piece. Layer the ham evenly between the two sandwiches. Close the sandwiches and dip them into the egg mixture, flipping to coat thoroughly. Set them aside on a plate. Repeat with the second sandwich.
In a large saucepan, fill with 2 inches of water and bring to a boil. While waiting, melt butter in a skillet over medium heat. Fry the sandwiches in the hot butter until golden brown and the cheese melts, about 4 minutes on each side.
Meanwhile, reduce the heat on the saucepan to medium-low, adding vinegar and maintaining a gentle simmer. Crack each egg into a small bowl, then carefully slide it into the simmering water. Repeat for the second egg. Cook until the whites are set, and the yolks have thickened, 2 1/2 to 3 minutes.
Transfer the sandwiches to plates and sprinkle with cayenne pepper. Remove the poached eggs using a slotted spoon, pat dry with a kitchen towel, and place an egg on each sandwich. Finish with a dusting of cayenne pepper.
