Make-Ahead Freezer Chicken Parmesan

Ingredients

1 pound skinless, boneless chicken breast halves

1 large egg, beaten

⅓ cup bread crumbs

2 tablespoons grated Parmesan cheese

¾ teaspoon Italian seasoning

½ teaspoon garlic powder

1 (8 ounce) can tomato sauce

¾ cup shredded mozzarella cheese
Directions

Preheat the oven to 375°F (190°C). Grease a baking sheet.

Pound the chicken breasts to a thickness of 1/2 inch or less.

Place a beaten egg in a bowl. In another bowl, mix bread crumbs, Parmesan cheese, Italian seasoning, and garlic powder. Dip each chicken breast in the egg, then coat in the breadcrumb mixture. Arrange on the prepared baking sheet.

Bake for 10 minutes. Flip the chicken and continue baking until it is no longer pink in the center and the juices run clear, about 10 more minutes. Let cool for 20 to 30 minutes.

Freeze in a 1-gallon resealable bag along with smaller bags of tomato sauce and mozzarella cheese.

To serve: Thaw the chicken in the refrigerator overnight. Reheat the chicken at 375°F (190°C) for 15 to 20 minutes, until heated through and crispy. Top with tomato sauce, sprinkle with mozzarella cheese, and bake for an additional 3 minutes until the cheese melts.
