Mama's Savory Broiled Tomato Toast

4 ripe tomatoes, sliced

3 tablespoons mayonnaise

½ teaspoon dried parsley

¼ teaspoon dried oregano

¼ teaspoon black pepper

3 tablespoons grated Parmesan cheese, divided

4 slices bread, lightly toasted
Instructions

Preheat the oven to broil.

In a shallow bowl, whisk together olive oil and vinegar. Add the tomatoes and stir occasionally to marinate them in the mixture.

In a separate small bowl, mix mayonnaise, parsley, oregano, black pepper, and 4 teaspoons of Parmesan cheese. Spread this mixture on each slice of toasted bread. Top with the marinated tomatoes and sprinkle with the remaining Parmesan cheese.

Place the prepared slices on a baking sheet and broil for 5 minutes, or until the cheese is golden and bubbly. Serve immediately, either open-faced or closed.
