Mango Chicken Skewers

Ingredients for Mango Chicken Skewers

¼ cup olive oil

2 teaspoons minced fresh ginger root

1 teaspoon lemon juice

1 teaspoon orange juice

1 teaspoon brown sugar

1 pinch white sugar

4 skinless, boneless chicken breast halves - cut into bite-size pieces

salt to taste

3 mangos - peeled, seeded, and diced

Instructions

In a shallow bowl, combine olive oil, grated ginger, lemon juice, orange juice, brown sugar, and white sugar. Add chicken breasts and marinate for at least 30 minutes in the fridge.

Preheat the grill to high. Season the chicken with salt, then alternate threading the chicken and mango onto skewers. Discard the marinade.

Lightly oil the grill grates. Grill the skewers for 15 minutes, turning occasionally, until the chicken is fully cooked and the juices run clear.
