Maple-Glazed Chicken Thighs

2 tablespoons maple syrup

2 tablespoons olive oil, divided

1 pound sweet potatoes, peeled and cut into 1-inch wedges

1 pound Brussels sprouts, trimmed and halved

4 bone-in chicken thighs

¼ cup chopped toasted pecans

¼ cup chopped dried cranberries
Cooking Instructions

Preheat your oven to 425°F (220°C). Line a 10x15-inch baking dish with aluminum foil.

In a small bowl, whisk together maple syrup, thyme, 1 teaspoon of olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Set the mixture aside.

In a large bowl, toss sweet potatoes and Brussels sprouts with 2 teaspoons olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Set aside.

Brush the chicken with the remaining 1 tablespoon of olive oil and season with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Place the chicken, skin-side down, in the center of the prepared pan and arrange the sweet potato mixture around it.

Roast for 15 minutes in the preheated oven. Flip the chicken, then brush the chicken, sweet potatoes, and Brussels sprouts with the maple syrup mixture.

Continue roasting until the sweet potatoes are tender and the chicken reaches an internal temperature of 165°F (74°C), approximately another 15 minutes. The chicken should no longer be pink in the center and juices should run clear.

For the final touch, sprinkle the roasted dish with pecans and cranberries before serving.
