Matamoros-Style Tacos

2 pounds ground chuck

2 tablespoons chili powder

2 tablespoons paprika

1 ½ teaspoons cumin

1 teaspoon salt

½ teaspoon garlic powder

2 cloves garlic, chopped

½ medium green bell pepper, chopped

½ medium onion, chopped

12 (6 inch) corn tortillas

12 ounces queso asadero (white Mexican cheese)

1 (8 ounce) container sour cream

1 large tomato, diced

2 cups shredded lettuce
Instructions

In a large skillet, cook the ground chuck over medium heat, seasoning it with chili powder, paprika, cumin, salt, garlic powder, and minced garlic. Add enough water to cover the meat and bring it to a boil. Lower the heat and let it simmer for 1 hour, adding more water if necessary and breaking the meat into small crumbles as it cooks.

Add the chopped bell pepper and onion to the skillet and continue simmering for another 30 minutes. Drain off the excess liquid and save the juices. If not using immediately, you can chill the juices to separate the fat more easily. Stir 5 tablespoons of the reserved juices back into the beef mixture and heat through.

Assemble the tacos by serving the seasoned beef on warm tortillas and topping with queso asadero, sour cream, chopped tomato, and shredded lettuce.
