Meatloaf Cupcakes with Mashed Potato Topping

Cooking Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, combine ground beef, crushed saltine crackers, chopped onion, diced green bell pepper, milk, egg, Worcestershire sauce, garlic, black pepper, and seasoned salt. Mix well until evenly combined.
In a separate bowl, whisk together ketchup and brown sugar. Spoon the ketchup mixture into the bottom of each cup in a 6-cup muffin tin.
Spoon the beef mixture into the muffin cups, making sure to leave a 1/2-inch space at the top for the meat to rise as it bakes.
Bake the meatloaf cups in the preheated oven for about 30 minutes, or until the center is no longer pink. Use an instant-read thermometer to ensure the internal temperature reaches at least 160°F (70°C). Drain any excess fat from the muffin cups.
Once baked, top each meatloaf cupcake with a generous spoonful of mashed potatoes and a sprinkle of Cheddar cheese.
Continue baking until the cheese has fully melted, approximately 10 minutes.
