Mediterranean Grilled Veggie Sandwich

1 eggplant, sliced into strips

2 red bell peppers

2 tablespoons olive oil, divided

2 portobello mushrooms, sliced

3 cloves garlic, crushed

4 tablespoons mayonnaise

1 (1 pound) loaf focaccia bread
Instructions
Set the oven to preheat at 400°F (200°C).
Coat the eggplant and red bell peppers with 1 tablespoon of olive oil, adding more if needed depending on their size. Arrange the vegetables on a baking sheet and roast in the preheated oven. Roast the eggplant until it becomes tender, about 25 minutes, and roast the peppers until their skins are blackened. Remove from the oven and let cool.
While the vegetables are roasting, heat 1 tablespoon of olive oil in a pan and sauté the mushrooms until they soften. Mix the crushed garlic into the mayonnaise. Cut the focaccia in half lengthwise and spread the mayonnaise mixture on one or both halves.
Once the peppers have cooled, peel off the skin, remove the seeds, and slice them. Layer the eggplant, peppers, and sautéed mushrooms on the focaccia.
Wrap the sandwich tightly in plastic wrap. Place a cutting board on top and weigh it down with some canned goods. Let it rest for 2 hours before slicing and serving.

Editor’s Note:
You can also grill the eggplant and red peppers. Simply brush the grate with a little oil and cook over medium to medium-high heat until the vegetables are tender and have beautiful grill marks.
