Mediterranean-Style Branzino

2 whole Branzino (sea bass) fish, cleaned

Cooking Instructions
Preheat your oven to 325°F (165°C).
Drizzle 1 tablespoon of olive oil into a large baking dish. Add red onion and season with salt and pepper to taste.

Place two whole branzino in the baking dish. Stuff the cavity of each fish with a lemon wedge, a sprig of rosemary, and some of the red onion from the pan. Pour white wine and lemon juice over the fish, then sprinkle with oregano. Drizzle the remaining tablespoon of olive oil over the fish.

Bake in the preheated oven for about 25 minutes, or until the fish becomes opaque and easily flakes when tested with a fork.

Carefully slide a spatula between the bones to separate the fish, then remove all bones. Transfer the fish to a platter, garnish with fresh parsley and two lemon wedges, and serve.
