Mexican Lasagna

Ingredients

1 pound lean ground beef

1 (1 ounce) package taco seasoning mix

1 (14 ounce) can peeled and diced tomatoes with juice

10 (6 inch) corn tortillas

1 cup prepared salsa

½ cup shredded Colby cheese
Directions

Preheat your oven to 350°F (175°C).

In a large skillet, cook the ground beef over medium-high heat. Add the taco seasoning and diced tomatoes, mixing well. Lay half of the tortillas in a 9x13-inch baking dish. Layer the beef mixture on top, then place the remaining tortillas over the beef. Spread salsa over the tortillas and sprinkle with cheese.

Bake in the preheated oven for 20 to 30 minutes, or until the cheese is melted and bubbly.
