Mini Beef and Bean Tacos

Ingredients

1 pound ground beef

1 packet taco seasoning

1/2 cup water

48 round corn tortilla chips, from 1 (11 ounce) bag

1 (14 ounce) can refried beans

8 ounces shredded Mexican blend cheese

1/4 cup finely chopped cilantro
-
1/4 cup taco sauce for dipping, or as needed
Instructions
Preheat your oven to 350°F (175°C).
Heat a large skillet over medium-high heat. Add the beef and cook, breaking it apart with a spatula and stirring occasionally, until browned, about 5 minutes. Stir in taco seasoning and water, scraping up any browned bits from the pan with a wooden spoon. Continue cooking, stirring occasionally, until the beef is fully coated in seasoning. Remove from heat and set aside.
Place whole chips on the bottom of two rimmed baking sheets. Spread a thin layer of refried beans over each chip, then top evenly with the taco meat and cheese.
Bake in the preheated oven for 5 to 7 minutes, or until the cheese is melted and bubbly.
Once the chips are baked, carefully fold each one in half to create a taco shape. Arrange the tacos on a serving platter and serve with taco sauce for dipping.
