Mom's Zucchini Fritters

2 cups grated zucchini

Instructions

Pat the grated zucchini dry with paper towels to remove excess moisture. In a large bowl, combine the zucchini, eggs, and chopped green onion. In a separate bowl, mix the flour, Parmesan cheese, baking powder, salt, and oregano. Add this dry mixture to the zucchini mixture and stir until just combined.

Heat oil in a large skillet over medium-high heat. Spoon the zucchini batter into the hot oil, cooking in batches, and fry until golden brown, about 2 to 3 minutes per side. Transfer the pancakes to a paper towel-lined plate to drain. Serve hot.
