Momma's Wholesome Meatloaf

Ingredients Needed

1 tablespoon olive oil

1 green bell pepper, diced

½ cup diced sweet onion

½ teaspoon minced garlic

1 pound extra-lean (95%) ground beef

1 cup whole wheat bread crumbs

¾ cup shredded carrot
-
¾ cup shredded zucchini

2 large eggs

salt and ground black pepper to taste

¼ cup ketchup, or to taste
Instructions

Prepare the ingredients. Preheat your oven to 400°F (200°C). Lightly grease a 9x5-inch loaf pan with cooking spray.

In a large skillet, heat olive oil over medium heat. Sauté the bell pepper and onion until the onion becomes translucent and the bell pepper softens, about 5 to 10 minutes. Add the garlic and cook for 1 to 2 minutes until fragrant. Remove from heat.

In a large bowl, mix together the ground beef, breadcrumbs, carrots, zucchini, eggs, salt, pepper, and the cooked bell pepper mixture. Use your hands to combine thoroughly. Press the mixture into the prepared loaf pan.

Bake the meatloaf in the preheated oven until the center is no longer pink, about 35 to 40 minutes. An instant-read thermometer should register 160°F (70°C).

Spread a layer of ketchup over the meatloaf and return to the oven. Continue baking until the ketchup bubbles, about 5 minutes.
