Mongolian-Style Grilled Pork Chops

Mustard Sauce Ingredients:

¼ cup red wine vinegar

3 tablespoons white sugar

2 tablespoons hot mustard powder (such as Coleman's ®) or Chinese style, to taste

1 large egg yolk
-
⅓ cup creme fraiche
-
1 teaspoon Dijon mustard

¼ teaspoon ground turmeric
-
¼ teaspoon cayenne pepper, or to taste
Instructions
Prepare the marinade: In a large bowl, combine hoisin sauce, minced garlic, soy sauce, grated ginger, red wine vinegar, rice vinegar, sherry vinegar, sesame oil, sugar, hot sauce, white pepper, and black pepper. Whisk until well blended.
Marinate the pork chops: Place the pork chops in a resealable plastic bag and pour just over half of the marinade into the bag. Seal and refrigerate for 6 to 8 hours. Set aside the remaining marinade.
Prepare the sauce: In a small saucepan over medium-low heat, combine red wine vinegar, sugar, mustard powder, and egg yolk. Whisk until the mixture slightly thickens, about 5 minutes, then remove from heat. Stir in crème fraîche, Dijon mustard, turmeric, and cayenne pepper. Let the sauce cool and refrigerate until ready to use.
Preheat the grill: Set the outdoor grill to high heat and lightly oil the grill grate.
Take the pork chops out of the marinade and pat them dry with paper towels. Discard the remaining marinade.
Grill the pork chops on the preheated grill until they develop brown grill marks, about 4 minutes per side.
Transfer the pork chops to a cooler part of the grill with medium heat and continue cooking, basting with the reserved marinade, until they are no longer pink inside, about 25 minutes. The internal temperature should reach at least 145°F (63°C) when measured with an instant-read thermometer.
Serve the grilled pork chops with a generous topping of mustard sauce.
