Instructions
Preheat your oven to 350°F (175°C) and lightly grease 12 muffin cups with cooking spray.
In a skillet, heat olive oil over medium heat. Add asparagus, green bell pepper, and onion, and cook while stirring until the vegetables are tender, about 5 to 10 minutes.

In a bowl, whisk together eggs, milk, salt, and black pepper. Stir in the cooked vegetables and Cheddar cheese, then spoon roughly 1/4 cup of the mixture into each muffin cup.
