Mujadarrah: Lentils and Rice with Crispy Onions

6 tablespoons olive oil

1 large white onion, sliced into rings

1 ⅓ cups uncooked green lentils

¾ cup uncooked long-grain white rice

salt and pepper to taste

¼ cup plain yogurt or sour cream (Optional)
Instructions

Heat olive oil in a large skillet over medium heat. Add onions and cook for about 10 minutes, or until golden brown. Remove from heat and set aside.

Add lentils to a medium saucepan and cover with lightly salted water. Bring to a boil, then reduce heat and simmer for about 15 minutes.

Stir in rice and enough water to cover the lentils. Season with salt and pepper. Cover and simmer for 15-20 minutes, or until the rice and lentils are tender.

Stir in half of the fried onions into the lentil-rice mixture. Serve with a topping of yogurt or sour cream and the remaining onions.
