Mushroom and Spinach Penne Casserole

1 (8 ounce) package uncooked penne pasta

2 tablespoons vegetable oil

½ pound portobello mushrooms, thinly sliced

½ cup margarine

¼ cup all-purpose flour

1 large clove garlic, minced

½ teaspoon dried basil

2 cups milk

2 cups shredded mozzarella cheese

1 (10 ounce) package frozen chopped spinach, thawed

¼ cup soy sauce
Instructions
Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
Bring a large pot of water with a pinch of salt to a boil. Add the pasta and cook for 8 to 10 minutes, or until al dente, then drain.
Heat oil in a saucepan over medium heat. Add mushrooms and cook for 1 minute, then set aside. In the same saucepan, melt margarine, then stir in flour, garlic, and basil. Gradually add milk, stirring until the mixture thickens. Stir in 1 cup of cheese until melted. Remove from heat and mix in the cooked pasta, mushrooms, spinach, and soy sauce. Transfer to a prepared baking dish and sprinkle with the remaining cheese.
Bake in the preheated oven for 20 minutes, until the dish is bubbly and lightly browned on top.
