Mushroom Meatloaf

½ pound fresh mushrooms

2 pounds lean ground beef

¾ cup fresh bread crumbs

½ cup minced onion

½ cup ketchup

2 eggs, beaten

1 ½ teaspoons salt

½ teaspoon ground black pepper
Instructions

Preheat your oven to 350°F (175°C).

Set aside 6 whole mushrooms, then finely chop the rest.

In a bowl, combine ground beef, chopped mushrooms, breadcrumbs, onion, ketchup, eggs, salt, and pepper. Mix well, then press half of the mixture into the bottom of a 9x5-inch loaf pan. Insert the whole mushrooms, stems down, into the meat mixture. Cover with the remaining meat mixture and gently press to combine it with the bottom layer.

Bake in the preheated oven for about 1 hour and 45 minutes, or until the center is no longer pink. A thermometer inserted into the center should read at least 160°F (70°C).
