Orange-Infused Roasted Salmon
Ingredients Needed

2 oranges, sliced into rounds

1 onion, thinly sliced

1 ½ tablespoons olive oil

5 (6 ounce) salmon fillets

1 tablespoon lemon pepper

1 ½ teaspoons garlic powder

1 tablespoon dried parsley

½ cup orange juice
-
1 ½ tablespoons lemon juice

1 tablespoon honey
Instructions

Preheat your oven to 400°F (200°C).

In a small bowl, combine the lemon pepper, garlic powder, and dried parsley. Layer the slices of one orange in the bottom of a 9x13 inch baking dish, followed by a layer of onion slices. Drizzle lightly with olive oil and sprinkle half of the herb mixture on top.

Place the dish in the oven and roast for about 25 minutes, or until the onions are golden and tender. Remove the dish from the oven, and raise the temperature to 450°F (220°C).

Push the onion and orange slices to the sides of the dish, creating space in the center for the salmon fillets. Season the salmon with the remaining herb mixture. In a small bowl, whisk together the orange juice, lemon juice, and honey, then pour it evenly over the salmon.

Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily. Transfer the salmon to a serving plate, discarding the roasted orange slices. Top the salmon with the roasted onions and fresh orange segments as garnish.
