1 (5 1/2 pound) corned beef brisket with spice packet

7 small potatoes, peeled and diced

4 medium carrots, peeled and diced

1 medium onion, diced

3 cloves garlic, chopped
Cooking Instructions

Preheat the oven to 300°F (150°C).

Place the corned beef brisket in the middle of a roasting pan. Surround with potatoes and carrots, then sprinkle onions and garlic over the top. Add the seasoning packet and pour enough water into the pan to nearly cover the potatoes. Cover the pan with a lid or tightly with aluminum foil.

Roast in the preheated oven until the corned beef is so tender it falls apart with a fork, about 5 to 6 hours.
