Oven-Baked "Fried" Rice
Ingredients List
-
2 cups long-grain white rice
-
2 tablespoons canola oil
-
1 tablespoon sesame oil, or to taste
-
1 cup diced ham
-
½ cup sliced green onions
-
½ cup diced red bell peppers
-
½ cup diced carrots
-
½ cup green peas
-
3 cloves garlic, crushed
-
1 pinch salt
-
3 cups chicken broth
-
3 tablespoons soy sauce
-
2 teaspoons chile paste (Optional)
Instructions
Begin by preheating your oven to 400°F (200°C).
Place the rice in an 8x12-inch baking dish. Drizzle both canola and sesame oils over the rice, then toss to coat evenly. Add the ham, green onions, bell peppers, carrots, peas, garlic, and salt. Stir everything together until well combined.
In a saucepan, bring the chicken broth, soy sauce, and chile paste to a boil over high heat. Pour the hot broth mixture over the rice and stir gently. Cover the dish tightly with heavy-duty aluminum foil.
Bake the rice in the preheated oven for 32 minutes. After baking, remove the dish and let it sit for 10 minutes. Increase the oven temperature to 475°F (245°C).
Carefully remove the foil and fluff the rice with a fork. Taste and adjust the seasoning as needed. Return the dish to the oven and bake for an additional 10 minutes, or until the rice is golden and crispy on top.
Chef's Tips
Feel free to swap in any vegetables you like, just make sure to chop them finely so they cook evenly.
Alternatively, you can broil the rice for a few minutes in Step 5 instead of baking.
Be cautious with sesame oil, as some varieties can be very strong and may overpower the dish.
If you prefer, you can use Chinese barbecue pork in place of ham.
