Pad See Ew: Thai Stir-Fried Noodles with Beef and Broccoli

Ingredients List
-
1 (8 ounce) package wide rice noodles
-
1 cup bite size broccoli pieces
-
1 tablespoon vegetable oil
-
1 teaspoon crushed garlic
-
½ pound rib-eye steak, sliced thin
-
½ cup water
-
1 tablespoon cornstarch
-
3 tablespoons oyster sauce
-
3 tablespoons soy sauce
-
1 tablespoon fish sauce
-
1 tablespoon white sugar
-
1 pinch salt and ground black pepper to taste
-
1 egg
Cooking Instructions
-
Soak the dry rice noodles in a bowl of hot water for about 10 minutes, until soft and white, but not mushy. Drain the noodles and set aside.
-
Boil water in a small pot and cook the broccoli for 5 to 7 minutes, until tender but still crisp. Drain and set aside.
-
Heat oil in a skillet over medium heat. Sauté garlic in the hot oil for 3 to 5 minutes until fragrant. Add the sliced steak and cook for 5 to 7 minutes, until it turns from pink to brown. In a bowl, whisk together water and cornstarch, then pour into the skillet with oyster sauce, soy sauce, fish sauce, and sugar. Stir in the rice noodles and broccoli, ensuring everything is evenly mixed. Season with salt and pepper, and simmer while preparing the egg.
-
Spray a small skillet with cooking spray and heat it over medium-low. Cook the egg until fully set with a firm yolk. Add the cooked egg to the skillet with the noodles and stir to combine. Serve hot.
