Pan-Seared Sirloin with Shiitake Mushrooms
Ingredients Needed

1 (12 ounce) sirloin steak

salt and freshly ground black pepper to taste

2 tablespoons oil, or as needed

⅓ cup shiitake mushrooms, stems discarded, caps thickly sliced

½ shallot, sliced

1 clove garlic, peeled

⅓ cup dry white wine

⅓ cup beef broth

¼ cup butter, cubed

2 tablespoons chopped fresh tarragon
Instructions
Season the steak with salt and pepper on both sides before cooking.
Preheat a heavy skillet over high heat until a drop of water sizzles and evaporates upon contact. Add oil to the pan. Place the steak in the skillet and cook until it begins to firm up, with a slightly pink center, around 4 minutes per side. Use an instant-read thermometer to check that the center reaches 140°F (60°C).
Remove the steak from the skillet and set it aside, covering it loosely with foil to keep it warm. Discard the remaining oil in the pan.
Lower the heat to medium-low and sauté mushrooms, shallots, and garlic, stirring often, until softened, about 5 minutes. Pour in the white wine and cook until it reduces slightly. Add beef broth and lower the heat further. Stir in butter one cube at a time, ensuring it melts well after each addition. Mix in tarragon and season with salt and pepper. Pour the mushroom sauce over the steak when serving.
