Patti's Mussels à la Marinière

50 fresh mussels, scrubbed and debearded

2 tablespoons extra-virgin olive oil

5 cloves garlic, minced

3 Roma (plum) tomatoes, chopped

3 green onions, chopped

1 cup white wine

1 bunch fresh parsley, chopped

2 tablespoons margarine or butter

salt and ground black pepper, to taste
Instructions
Submerge mussels in a large bowl filled with cold water and allow them to soak for about 20 minutes to expel any grit or sand.
Warm olive oil in a large stockpot over medium-low heat. Add garlic and cook for 1 minute, being careful not to let it brown. Then, stir in tomatoes and green onions and cook until nearly tender. Mix in wine, parsley, and butter; bring to a boil. Let it boil until the liquid reduces by half, about 15 minutes. Season with salt and pepper to taste.
Add the mussels to the pot, cover, and cook until the shells open, about 10 minutes. Transfer the mussels and sauce to a large serving dish, discarding any mussels that did not open.
