Peanut Butter Chocolate-Covered Cracker Sandwiches

¾ cup creamy or chunky peanut butter

2 pounds chocolate almond bark, broken into pieces

80 buttery round crackers (such as Ritz®)

2 ¼ ounces colored candy sprinkles (Optional)
Instructions

Spread a teaspoon of peanut butter on each cracker half. Press the halves together to form 40 peanut butter-filled cookie sandwiches.

Melt the almond bark in a double boiler over simmering water, not boiling. Keep the chocolate warm over the water's heat.

Dip each cookie sandwich into the melted chocolate, letting the excess drip back into the pot.

Set the dipped cookies on wax paper and immediately add sprinkles to the wet chocolate so they stick.

Refrigerate the cookies for about 15 minutes until the chocolate hardens.
Pro Tip
You can swap out the chocolate almond bark for vanilla-flavored candy coating, and use any type of candy coating in place of sprinkles for decoration.
