Penne Pasta with Beans

1 ½ tablespoons extra virgin olive oil

1 onion, chopped

2 tomatoes, chopped

1 (15 ounce) can cannellini beans

2 cups penne pasta

Cooking Instructions

Heat olive oil in a medium saucepan and sauté the onion until softened. Add tomatoes and the entire can of beans. Simmer for 10 minutes.

Bring a large pot of salted water to a boil. Add penne pasta and cook for 8-10 minutes, or until al dente. Drain.

Combine the cooked pasta with the bean mixture, and season with salt to taste.
