Pork Adobo Filipino Style

1 cup distilled white vinegar

1 cup soy sauce

½ cup ketchup

1 tablespoon minced garlic

3 bay leaves

1 teaspoon fresh-ground black pepper

2 ½ pounds lean pork, cut into 1 inch cubes

1 pound small green beans, trimmed (Optional)
Instructions

In a large pot, mix together vinegar, soy sauce, ketchup, garlic, and bay leaves. Add the cubed pork, and bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and simmer for about 2 and a half hours, stirring occasionally. If you’re adding green beans, toss them in during the final 30 minutes of cooking.
