Pork Chop and Potato Casserole

1 (10.75 ounce) can condensed cream of celery soup

⅔ cup milk

½ cup sour cream

1 (16 ounce) package frozen hash brown potatoes, thawed

¾ cup shredded Cheddar cheese

1 (6 ounce) can French-fried onions, divided

¼ cup shredded Cheddar cheese
Instructions

Preheat your oven to 350°F (175°C).

Heat vegetable oil in a large skillet over medium heat. Season the pork chops with seasoned salt. Brown the pork chops in the hot oil, about 2 to 3 minutes per side. Once browned, remove the chops and place them on a paper towel-lined plate to drain excess oil.

In a bowl, mix together celery soup, milk, sour cream, salt, and pepper. Stir in the hash brown potatoes, 3/4 cup of Cheddar cheese, and half of the French-fried onions. Pour the mixture into a 13x9-inch baking dish, and place the browned pork chops on top. Cover with aluminum foil.

Bake the casserole for 40 minutes in the preheated oven. Remove the foil and sprinkle the remaining 1/4 cup of Cheddar cheese and the rest of the French-fried onions over the pork chops. Continue baking for another 5 minutes until the cheese is melted. The pork chops should reach an internal temperature of 145°F (63°C) when tested with an instant-read thermometer.
