Potato and Veggie Frittata

1 teaspoon olive oil

½ cup chopped onion

1 clove garlic, minced

½ cup diced green bell pepper

1 zucchini, halved lengthwise and cut in 1/4 inch slices

2 cups cooked and diced potatoes

1 cup chopped fresh tomato

2 tablespoons black olives

4 eggs

salt and pepper to taste

¼ teaspoon dried oregano

1 pinch cayenne pepper

½ small tomato, sliced

¼ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese
Instructions

Position an oven rack about 6 inches from the broiler and preheat the oven’s broiler.

In a skillet with an oven-safe handle, heat some oil. Sauté onions, garlic, and bell peppers over low heat until soft but not browned. Add zucchini and cook, stirring occasionally, until tender yet crisp. Add in the potatoes and cook, stirring often, until they’re heated through and starting to stick to the pan. Stir in the chopped tomatoes and olives, cooking until the tomatoes release their juices.

In a bowl, whisk together the eggs, salt, pepper, oregano, and cayenne. Pour the egg mixture over the cooked vegetables in the pan.

Top the eggs with tomato slices, then sprinkle mozzarella and Parmesan over the tomatoes. Cook gently over low heat until the eggs are mostly set (firm around the edges, slightly runny in the middle).

Transfer the pan to the preheated broiler and cook for 1 to 2 minutes, or until the eggs are fully set and the cheese is melted and lightly browned. Slice into wedges and serve.
