1 (5 pound) bone-in beef prime rib roast

2 teaspoons Montreal-style steak seasoning (such as McCormick)

Instructions

Place the roast, bone side down, in a roasting pan.

In a small bowl, whisk together olive oil, steak seasoning, garlic, Italian seasoning, and mustard powder. Rub this mixture over the roast. Let the roast sit at room temperature for about 45 minutes.

Preheat the oven to 450°F (230°C).

Roast the meat in the preheated oven for 20 minutes. Insert a meat thermometer into the thickest part of the roast, avoiding the bone. Lower the oven temperature to 325°F (165°C).

Continue roasting until the internal temperature reaches 145°F (65°C) for medium doneness, about 1.5 to 2 hours. Once done, remove the roast from the oven, cover it with a double layer of aluminum foil, and let it rest in a warm area for 10 to 15 minutes before slicing.
