Punjabi-Style Chicken in Rich Gravy

Instructions

Heat a mix of oil and ghee in a large pot over medium heat. Once hot, add cumin seeds and cook until they begin to darken slightly.

Add chopped onion and sauté until softened and translucent, around 5 minutes. Stir in minced garlic and ginger, cooking for another 5 minutes until the onions are golden brown.

Pour in water, add chopped tomatoes, serrano pepper, tomato paste, garam masala, turmeric, and salt. Let the mixture simmer for 5 minutes. Add chicken pieces to the pot, stirring gently to coat with the sauce. Cover, reduce heat to medium-low, and cook for 40 minutes, or until the chicken is fully cooked through. Garnish with fresh cilantro before serving.
