Quick and Easy Spinach Quiche

1 (15 ounce) package refrigerated pie crusts

4 cups shredded Cheddar cheese

1 (12 ounce) package frozen chopped spinach, thawed and drained

1 cup finely chopped onion

12 eggs

2 cups milk

salt and ground black pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Line two 9-inch pie pans with pie crusts. Cover the crusts with aluminum foil and a layer of pie weights or dried beans.

Bake in the preheated oven until the edges of the crust turn golden, about 10 minutes. Remove the foil and weights carefully, then bake for an additional 5 minutes until the crust is set. Allow the crusts to cool briefly. Lower the oven temperature to 350°F (175°C).

Evenly distribute cheese, spinach, and onions onto the crusts. In a bowl, whisk together eggs, milk, salt, and pepper, then pour evenly over the crusts.

Bake in the center of the oven for about 45 minutes, or until golden brown and firm in the center.
Cooking Tip
Feel free to choose any cheese you prefer. For an indulgent twist, swap the milk for cream.
