Quick and Easy Vegan Sheet Pan Roasted Cauliflower, Tomatoes, and Chickpeas

2 cups cherry tomatoes

1 (15 ounce) can garbanzo beans, drained

1 lime, cut into wedges

1 tablespoon chopped fresh cilantro
Instructions

Preheat the oven to 450°F (230°C). Line a baking sheet with foil and lightly coat with cooking spray.

In a bowl, mix olive oil, garlic, salt, and pepper. Add cauliflower, tomatoes, and chickpeas, tossing them to coat. Spread everything in a single layer on the prepared baking sheet. Place lime wedges around the vegetables.

Roast in the oven for about 25 minutes, or until the vegetables are caramelized. Remove the lime wedges and garnish with fresh cilantro before serving.
