Quick and Simple Stuffed Peppers

1 ¼ pounds ground beef

3 cloves garlic, minced

1 onion, diced

1 (15.5 ounce) can diced tomatoes

1 cup shredded Cheddar cheese

1 ½ cups chicken broth

6 red bell peppers
Instructions

Preheat the oven to 350°F (175°C).

In a large nonstick pan, heat over medium-high heat. Add ground beef and cook until browned and crumbly. Drain excess fat, then mix in garlic, onions, and tomatoes. Stir and cook for 3 minutes, until the onions soften. Add cheese to the mixture, then remove from heat and set aside.

Slice the tops off the peppers and remove the seeds and membranes. Stuff each pepper with the beef mixture, then pour a little chicken broth over the top. Place the peppers in a muffin tin and cover them with their tops.

Bake in the preheated oven for 30 minutes.
