Rajma (Kidney Bean Curry)

2 cups dry red kidney beans

1 large onion, chopped

4 cloves garlic, chopped

1 (2 inch) piece fresh ginger root, chopped

2 tablespoons vegetable oil

2 teaspoons ghee (clarified butter)

2 dried red chile peppers, broken into pieces

1 teaspoon cumin seeds

6 whole cloves
-
1 teaspoon ground turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

2 tomatoes, chopped

2 cups water

1 teaspoon white sugar

salt to taste

2 teaspoons garam masala

1 teaspoon ground red pepper

¼ cup cilantro leaves, chopped
Directions

Soak the kidney beans in a large bowl of cool water for 8 hours or overnight. Drain and rinse well.

Blend the onion, garlic, and ginger into a smooth paste using a mortar and pestle.

Heat a mix of oil and ghee in a pressure cooker over medium heat. Add the red chiles, cumin seeds, and whole cloves. Fry until the cumin seeds start to pop. Stir in the onion paste and cook until it turns golden brown. Season with turmeric, cumin, and coriander powder, then add the tomatoes and cook until they soften completely.

Add the soaked and drained kidney beans to the cooker, along with enough water to cover the beans. Add 2 more cups of water, sugar, and salt. Seal the pressure cooker and cook for 40 minutes under 15 pounds of pressure. Reduce the heat and cook for another 10-15 minutes. Release the pressure and open the cooker. Stir in garam masala and red chili powder. Garnish with fresh cilantro before serving.
