Ratatouille Casserole

2 cups peeled and diced eggplant

1 (8 ounce) package frozen cheese ravioli

¾ cup shredded mozzarella cheese
Instructions
Preheat your oven to 350°F (175°C). Lightly spray a 2 1/2-quart baking dish with cooking spray.
Heat olive oil in a large skillet over medium heat. Add eggplant, onion, and garlic, cooking and stirring until the vegetables soften, about 8 minutes. Stir in zucchini, tomatoes, bell pepper, basil, parsley, salt, and black pepper. Bring to a boil, stirring often. Reduce the heat to medium-low and simmer until the vegetables are tender, about 20 minutes.
Fill a large pot with water and add a pinch of salt. Bring it to a boil, then stir in the ravioli and cook according to the package instructions. Drain and transfer the ravioli to the bottom of the prepared baking dish. Spoon the hot vegetable mixture over the ravioli and top with mozzarella cheese.
Bake in the preheated oven for about 20 minutes, or until the dish is bubbling and the cheese has melted.

Chef's Tip:
You can swap zucchini for yellow summer squash and use 2 or 3 fresh garden tomatoes in place of canned tomatoes for a different twist.
